Caramelized orange pipe rigate with shrimps and parsley

Ingredients for 4 persons

  • 350 g pipe rigate
  • 250 g shrimps
  • 200 ml orange juice
  • 1 heaped teaspoon of dried and chopped orange peel
  • Salt and parsley to taste

 

Preparation:

While boiling the pasta, put a drizzle of EVO oil in a pan.

When the oil is hot, add the orange juice and let it cook until the orange caramelises with its own sugar. Add the shrimps and let them cook for about 10 minutes.

Finally pour the now cooked pipe rigare into the pan and toss with the parsley and the dried and chopped orange peel. Serve and if you like, add a dash of pepper and a sprinkling of cinnamon or turmeric.
