Lucia Rapisarda

Tiramisu pancakes

Ingredients:

  • 10 g coconut (or rice) flour
  • 30 g of egg white (or 1 egg)
  • 50 g of soy milk (or other)
  • 90 g Greek yoghurt (25 g for the batter, the rest for the filling)
  • 1 tablespoon stevia
  • 1.5 g yeast
  • Dusting of bitter cocoa
  • 24 hazelnuts

Preparation:

Whip the egg white and add it slowly to the flour, then add the yoghurt, stevia and finally the milk.

Stir and add the yeast. Cook the pancakes on a preheated non-stick pan.

For the filling:

Whip 25 gm of milk with a milk frothier and add it to the yoghurt. Layer the pancakes and cream. Add the hazelnuts and a sprinkling of cocoa.
