Chicken tagliata with potatoes, pumpkin and porcini mushrooms

Single dish, low difficulty, 40 minutes preparation, 543 kcal

Ingredients:

  • Chicken breast 120 g
  • Porcini or mixed mushrooms 300 g
  • Yellow potatoes 200 g
  • ¼ avocado
  • Golden onion 1
  • Cherry tomatoes 100 g
  • Garlic 2 cloves
  • Extra virgin olive oil 1 teaspoon
  • Salt, pepper, parsley, soy sauce to taste

 

Procedure

Preparation

Peel the potatoes and pumpkin, removing the seeds and spongy part.

Soak the potatoes for about 10 minutes, rinsing several times.

Quickly rinse the pumpkin and mushrooms, dry them and cut them into pieces of about 3 cm.

Wash the avocado and cherry tomatoes.

Peel the onion and cut everything into 1 cm cubes and combine the ingredients in a separate bowl.

Cooking

Line a baking tray with baking paper and turn on the oven at 190°.

Season the potatoes evenly directly in the baking dish with 1 clove of poached garlic, rosemary, salt and pepper to taste and 1 teaspoon of oil.

Bake for 30-35 minutes, stirring occasionally.

Boil the pumpkin in the casserole dish or steamer and then blend it.

Put 1 teaspoon of oil in a frying pan and fry 1 clove of garlic over a moderate heat.

As soon as the garlic is golden brown, add the mushrooms and season with salt, pepper, parsley and soy sauce for about 10 minutes over a low heat.

Put a second pan on the heat and once hot, add the chicken breast and brown it well on both sides.

Add the soy sauce and finish cooking, taking care not to dry out the meat too much. 

Plate

Spread the pumpkin puree on a large plate and place the chicken on top.

Garnish with the mushrooms and potatoes, accompanied by a couple of spoonfuls of avocado sauce.

 

Tips and tricks

To keep the recipe "lighter", you can cook both potatoes and mushrooms in a steamer (or pressure cooker), quickly stirring them in a non-stick pan.

This will save you oil and time, as well as allowing you to get on with other things while cooking!
